What I ate today in my Vegan Pregnancy

This is what I ate today at 18 weeks pregnant. Every day is different and I'm all about easy yummy vegan meals. This is my first vegan pregnancy and I'm so excited to share my journey.

This is what I had:

BREAKFAST: Bircher Muesli
1 cup oats
1/2 grated apple
1 tsp rice malt syrup
1 Tbl chia seeds
1 Tbl sunflower seeds
1 Tbl pumpkin seeds
Topped with: coconut yoghurt, banana & berries

LUNCH: Super simple, spinach, avocado, tomato & seseme seeds on whole wheat crackers

AFTERNOON TEA: Green Smoothie
little bit of lemon
frozen mango
hemp seeds
sunflower seeds
blended with some water

BANANA MUFFIN RECIPE: These were so good & super simple!
I substituted the oil for coconut oil, sugar for coconut sugar, maple syrup for rice malt syrup. And used buckwheat flour.

DINNER: Nourish Bowl
Oven roasted potatoes
Black beans cooked with turmeric, garlic powder & paprika
Tomato salsa - tomatoes, purple onion, coriander
Spinach & Avocado
